I made a terrific dish of stuffed pork chops with an apple and blue cheese stuffing, two flavors that go great together. I had researched a variety of recipes and met them on some middle ground for what turned out to be a perfect blend of flavors. Again the proportions here are for two normal human sized portions. Stuffed Pork Chops with Apple and Blue Cheese Stuffing 2 1 inch thick boneless pork loin chops 3 Tbs. butter 1/4 cup diced onions 2 Tbs. diced celery 1/4 cup diced mushrooms 2/3 cup diced granny smith apple 1/4 cup Panko bread crumbs 1/4 cup crumbled blue cheese Salt and pepper to taste Preheat oven to 325 F. In a saute pan, melt butter and add the onions, celery and mushrooms, cook for about five minutes until onions are translucent. Toss in apples and bread crumbs until thoroughly coated. Remove from heat and crumble in blue cheese, gently toss. You want the cheese to start melting in the warm stuffing mixture to help bind the ingredients, but you still want discrete pieces. Cut a deep pocket into each pork chop, there should be about 1 cm of margin at the base and sides of the pocket. Stuff half the stuffing mixture into each pork chop and secure opening with a toothpick. I garnished mine with several additional slices of apple across the top with a little butter to prevent drying out. Bake for 60-70 minutes until surface is starting to turn golden brown and edges of stuffing start to get crispy.
