Fruit crisp -- rhubarb crisp
This makes for an excellent crisp topping on any type of fruit. It is particularly excellent over rhubarb, and it works well over berries as well as apples:
Combine dry ingredients:
3/4 cup oats
3/4 cup all purpose flour
2/3 cup light brown sugar
1 tsp. cinnamon
1/2 tsp. ginger
pinch of kosher salt
Add: 1 stick cold unsalted butter, cut into small cubes
Work thoroughly with fingers, should bring it together enough to have no powdery ingredients but also just enough to still have chunks of butter and crumbly.
I used a couple small ramekins with about 1 cup of sliced fresh rhubarb tossed with a pinch of sugar and topped with a healthy dose of the crumble topping.
Baked at 350F for 30 minutes produced a crispy crumble.
