As I finish eating the last cookie of the batch, I'm considering immediately baking some more. These are not your ordinary chocolate chip cookies, the bitter-sweet chocolate is key, seriously toning down the sweetness and appealing to a more adult palette. The coconut and oatmeal contribute to the moist chewy texture. And you've got to have nuts to round out the flavor. This is quite possibly the best cookie recipe I have ever come across (and I know cookies, the dessert fan that I am). 1 cup rolled oats, ground in food processor until very fine 1 cup all-purpose flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 8 Tbs. unsalted butter 1/2 cup packed brown sugar 1/2 cup granulated sugar 1 large egg 1/2 tsp. vanilla 6 oz. bitter-sweet chocolate chips 1/2 cup coconut 2 oz. semi-sweet chocolate finely chopped 3/4 cup chopped pecans (or walnuts) - Whisk togegher dry ingredients. - Beat butter and sugars until fluffy, then add egg and vanilla until combined. - Add dry ingredients, beat until just combined. - Stir in chocolates, coconut and nuts. Roll into 1 1/2" diameter balls. Makes 16-18 large, soft, chewy cookies. Bake at 350F, 15-18 minutes. Enjoy warm cookies with a chilled glass of milk. Mmm. :)
