Gratin dinner

I made this as seen on Jacques Pepin’s “Fast Food My Way” on Saturday. I have the cookbook that goes with the series as well, he is one of my favorite chefs. This was so easy to whip up and with cute salad supplies and a couple of servings of wedding soup left over from yesterday, this made a very nice Valentines dinner.

Pasta, ham and vegetable gratin c/o Jacques Pepin

~1 1/2 cups mini penne
1 1/2 cups diced cooked ham
3/4 cup corn
1/2 cup peas
1/4 chopped scallions
3/4 cup grated Swiss (I used a Jarlsberg, a very mild swiss)
salt and pepper to taste

White Sauce

2 Tbs butter
2 Tbs flour
1 1/2 cups milk
1/4 cup heavy cream

2 Tbs grated parmesan cheese

Make pasta. Combine vegetables, ham and swiss in bowl. Toss in cooked pasta

For the white sauce: melt the butter in a shallow pan, add flour and mix in with a whisk until in bubbles; add milk and cream and heat until slightly thickened. Pour over pasta and veggies and toss. Add salt and pepper to taste.

Place everything into a shallow baking dish, sprinkle with parmesan and place under the broiler for 6-8 minutes until bubbling and golden brown on top.
