Oatmeal Almond Spice cookies

Riffling through the cupboards assessing what ingredients I had to work with and with the desire to bake something I settled on making oatmeal cookies. Rather than raisins I added chopped almonds and coconut and seasoned them with nutmeg, ginger, cinnamon, clove and all spice. This combination yielded a nicely spicy chewy granola-bar like cookie.

Cream together:
1 stick of butter
1/2 cup packed brown sugar
1/4 cup granulated sugar

Then add:
1 egg
1 tsp. Vanilla

Combine and then add to wet mixture:
3/4 cup flour
1 1/2 cups oatmeal
1/2 tsp. baking soda
1/2 tsp. cinnamon
a pinch each: fresh nutmeg, ginger, all spice, and just a dash of powdered clove
(This is more or less what is in the average pumpkin pie spice mix, use 1/2 tsp. if that’s what you have)

Mix in goodies:
1/2 cup chopped almonds
1/4 cup coconut

Roll into heaping 1 Tbs. balls and bake at 350F for 10-12 minutes.
